Marinated Grilled Prawns

16 large prawns
1/4 cup olive oil
1 1/2 teaspoons balsamic vinegar
2 tablespoons fresh lemon juice
4 garlic cloves, chopped
2 tablespoons fresh basil, chopped (or 1 tablespoon dried)
1 1/2 teaspoon fresh oregano, minced (or 3/4 teaspoon dried)
3/4 teaspoon pepper
2 tablespoons fresh Italian parsley, chopped


Shell and devein prawns then pat dry. In a shallow glass bowl combine olive oil, balsamic vinegar, lemon juice, garlic, basil, oregano, pepper, and Italian parsley. Add prawns. Marinate 20-30 minutes, turning each prawn two or three time to coat with sauce. Remove prawns from marinade and shake off excess. Thread prawns onto metal skewers. Grill over hot coals for 8-10 minutes, turning frequently, until prawns turn pink and are cooked.
