Hash Brown Potatoes

2 medium potatoes
1 1/2 teaspoons onion, chopped (optional)
2 teaspoons olive oil
salt and pepper


Boil or steam potatoes in their skin. Chill. Peel. Shred. Toss with onion, olive oil, salt and pepper. Pat potatoes into thin patties. Brown in a nonstick skillet over medium heat for 10-12 minutes. Turn. Brown 8-10 minutes longer, or to desired brownness. For extra crispness, using to spatulas, cut horizontally through center of patty; flip one half over the other.
