Easy Jalapeno Hummus
Submitted by Ernestine Sedillos, MS, RD, LD

Use this as a veggie dip or serve with pita bread or whole grain crackers. Drizzle with a touch of olive oil for a different flavor and texture.

1 15 ounce can garbanzo beans, drained, liquid reserved
2 ounces fresh jalapeno pepper, sliced
1/2 teaspoon ground cumin
2 tablespoons lemon juice
3 cloves garlic, minced

Combine garbanzo beans, jalapeno, cumin, lemon juice, garlic, and 1 tablespoon of reserved bean liquid in a food processor or blender. Blend until smooth. Refrigerate a few hours before serving to allow flavors to blend.
