Orange Almond Vinaigrette Salad

CRYSTALLIZED ALMOND CROUTONS:
1/2 cup almonds, sliced
3 tablespoons sugar
4 drops fresh lemon
Put almonds, sugar and lemon juice in pan on medium heat and stir constantly until brown. Lay out on baking paper to cool. Break up pieces.
SALAD:
1 head each iceberg and romaine lettuce, torn apart
1 cup celery, chopped
4 scallions, chopped
11 ounce can mandarin oranges, drained
Mix lettuce, celery and scallions. Hold oranges until ready to serve.

DRESSING:
1/2 teaspoon salt
Dash pepper
1/4 cup vegetable oil
1 teaspoon parsley, chopped
1 teaspoon sugar
2 tablespoons rice wine vinegar
Dash Tabasco
Mix dressing well and drizzle over the greens. Top with the oranges and almond croutons. Garnish with cherry tomatoes.
